Stir-fry bowl *recipe*

plant-based / gluten-free / anti-inflammatory⁣

I create dishes like this all day, every day and have decided to finally start documenting how I make them! (Usually I just wing it and then I’m pleasantly surprised)⁣

Brown rice
• Rinse 1 cup brown rice in mesh strainer thoroughly until water runs clear⁣
• Add rice and 2 cups water to pot with 1 Tbsp olive oil and 1/2 tsp sea salt⁣
• Bring to a boil and then reduce to simmer and put lid on⁣
• Cook for 40-45 minutes or until water is fully absorbed⁣
• Use fork to carefully fluff rice⁣

Veggie stir fry
• Heat 1 1/2 Tbsp avocado oil over medium heat⁣
• Add 1 cup chopped onions & 2 pressed garlic cloves; cook until translucent⁣
• Add 1 1/2 cups mushrooms, 3 cups shredded broccoli, 1 tsp fresh grated ginger & 1/2 tsp sea salt; cook until beginning to brown⁣
• Add 3 Tbsp coconut aminos, 1 1/2 tsp rice vinegar and 1/2 tsp fresh cracked peppercorns; cook until tender⁣

Cucumber salad
• Add 1 chopped cucumber, 2 Tbsp chopped cilantro & 2 Tbsp chopped green onion to bowl⁣
• Add 1 tsp rice vinegar & 1/4 tsp togarashi spice⁣

Chili almond sauce ⁣
• Mix 1 Tbsp unsweetened almond butter with 1 tsp chili onion crunch sauce⁣

Construct your bowl
• Add brown rice to bottom of bowl⁣
• Top with stir fried vegetables⁣
• Add fresh sliced avocado, cucumber salad & sauce⁣
• Garnish with sesame seeds⁣
• Chow down! ?
