Quick, easy turkey chili

Turkey Chili

This turkey chili recipe is super quick & easy and makes a delicious, nutritious dinner. Makes 4 servings.

Ingredients:

  • 1 lb. raw 93% lean ground turkey
  • 2 tsp. coconut
  • 1/2 medium onion, chopped
  • 1/2 medium green or red pepper
  • 1 (8-oz.) can tomato sauce, no sugar added
  • 1 can pinto beans
  • 1 can dark red kidney beans
  • 1 can petite diced tomatoes, no sugar/salt added
  • 1 clove garlic, minced
  • 1 1/2 tbsp. chili powder
  • 1 tbsp. cumin
  • 1/4 tsp. mexican oregano
  • Cayenne pepper to taste; optional
  • Sea salt & black pepper
  • Optional toppings: Cilantro, shredded cheese, sour cream, lime wedge

Instructions:

  • Heat oil in large saucepan over medium-high heat.
  • Add onion and bell peppers; cook, stirring occasionally, for 5 to 6 minutes, or until onion is translucent.
  • Add garlic; cook, stirring frequently, for 1 minute.
  • Add turkey and season with sea salt and pepper.
  • When turkey is starting to brown on outside, add beans, tomatoes, tomato sauce and remaining spices and bring to a boil.
  • Reduce heat; stirring occasionally, for 20 minutes, or until slightly thickened.
  • Top with optional toppings, serve & enjoy!
