Turkey Chili
This turkey chili recipe is super quick & easy and makes a delicious, nutritious dinner. Makes 4 servings.
Ingredients:
- 1 lb. raw 93% lean ground turkey
- 2 tsp. coconut
- 1/2 medium onion, chopped
- 1/2 medium green or red pepper
- 1 (8-oz.) can tomato sauce, no sugar added
- 1 can pinto beans
- 1 can dark red kidney beans
- 1 can petite diced tomatoes, no sugar/salt added
- 1 clove garlic, minced
- 1 1/2 tbsp. chili powder
- 1 tbsp. cumin
- 1/4 tsp. mexican oregano
- Cayenne pepper to taste; optional
- Sea salt & black pepper
- Optional toppings: Cilantro, shredded cheese, sour cream, lime wedge
Instructions:
- Heat oil in large saucepan over medium-high heat.
- Add onion and bell peppers; cook, stirring occasionally, for 5 to 6 minutes, or until onion is translucent.
- Add garlic; cook, stirring frequently, for 1 minute.
- Add turkey and season with sea salt and pepper.
- When turkey is starting to brown on outside, add beans, tomatoes, tomato sauce and remaining spices and bring to a boil.
- Reduce heat; stirring occasionally, for 20 minutes, or until slightly thickened.
- Top with optional toppings, serve & enjoy!
